Masala Egg Curry


Ingredients:
6 eggs boiled and peeled
4 tablespoons oil
3 medium size onions, chopped
1 teaspoon ginger paste
1 teaspoon garlic paste
1 tomato, finely chopped (1 tablespoon tomato puree can also be used)
2 cups yogurt, whisked
1/3 teaspoon turmeric powder
1 teaspoon chilli powder
1/2 teaspoon cumin powder
1 teaspoon garam masala
1 teaspoon coriander powder
Salt to taste
Coriander leaves for garnishing.

Preparation:
Heat oil in a pan and sauté onions till light brown.
Add ginger and garlic paste. Sauté until cooked.
Add tomatoes. Mix them well.
Add turmeric powder, cumin powder, coriander powder, chilli powder, garam masala and salt. Sauté for 2 minutes with 1/4 cup of water.
Add whisked yogurt and cook for 3-4 minutes until all masalas are mixed well.
Add boiled eggs and stir gently. Bring it to boil on a medium heat.
Garnish with fresh chopped coriander leaves.

Note: Boiled eggs can also be shallow fried slightly before putting them into the prepared masala (optional).

Great guys:))like I mentioned in the note, you can try with slightly fried eggs---sometimes may be more turning the skin of the eggs brown and put them in the gravy. I enjoy both ways.
