Lettuce, Arugula and Tomato Salad
Ingredients:
3 cups chopped romaine lettuce
1 cup chopped arugula leaves
1 medium size finely diced tomato
1 tablespoon hemp heart seeds
Ingredients for
dressing:
1 cup olive or avocado oil
1/4 teaspoon freshly ground pepper powder
1/4 teaspoon garlic powder
1 teaspoon freshly squeezed lemon juice
Salt to taste
Salt to taste
Preparation:
Mix all ingredients of dressing, whisk and keep aside at room temperature.
Mix chopped romaine,
arugula and tomato leaves in large bowl.
Add dressing and toss.
Sprinkle with remaining
seeds and serve.

Spicy Jalapeno Chicken Sausages
Ingredients:
4 large chicken sausages
sliced diagonally
1 tablespoon oil
1 medium size onion
roughly chopped
1/2 teaspoon cumin
powder, coarse ground
1/4 teaspoon black
pepper powder
1/2 teaspoon garlic
powder
1 medium size diced
tomato
1 jalapeno chili pepper
cut into medium size pieces
2 tablespoons Mexican blend
grated cheese
Salt to taste
1 tablespoon freshly
squeezed lemon juice
1 tablespoon cilantro
leaves for garnishing
Preparation:
Rinse sausages in cold water before you prepare to remove extra
preservatives.
Heat oil in a pan, add onions and sauté for 2-3 minutes.
Add garlic powder, cumin powder, black pepper powder, diced tomato and sauté
for few minutes until tomatoes are softened.
Add jalapeno’s into the mixture, and stir well.
Add sausage pieces and mix for few minutes over medium –low flame.
Add salt to taste (Precooked sausages are usually salty so taste before
you add required amount of salt).
Sprinkle grated cheese over sausages.
Garnish with cilantro leaves.
Serve hot with rice or bread.
